Food Processing (Bakery) courses:

Academia International’s School of Food Processing (Bakery) offers you an opportunity to start a career in the bakery and food processing industry.

 

Our fully equipped bakery kitchen has the same equipment found in many modern bakeries. In addition to the practical training, Certificate IV and Diploma students also study a number of management courses, giving students information on budgets, financial plans, supplier agreements, the science behind food processing and much more.

 

Our food processing / bakery school instructors have an average of more than 10 years experience in the industry or as instructors

 

Patisserie and Cookery courses:

Academia International’s department of Hospitality School ( Commercial Cookery / Patisserie ) offers you a creative career that is financially secure with opportunities to work both in Australia and Internationally.

 

Our demo kitchen and off-campus ( short walk from the college ) 5-star fully equipped commercial kitchens provides you with real hands-on practical experience to maximise your job placement opportunities. Furthermore, as Academia International is a multi-course college, our Commercial Cooking Students have access to full class room facilities for theoretical tuition and state of the art PCs for Internet research of the Food Industry, project development and general computer skill tuition.

 

Delivery of theory and practical training is conducted at our purpose built college patisserie training kitchen and in our commercial kitchen at luxurious 5-star Langham Hotel, creating a realistic environment in which to learn.

 

Our Cooking School Instructors have 10+ years (on average) of Instructor and Industry experience, all still practicing in commercial cooking in leading restaurants. Attending Academia International means that you will attend regular speaker opportunities, presented in our auditorium and learn in a positive and supportive environment.

 

Hospitality Management:

This school course prepares students to work at Management level with a broad range of skills for the Hospitality Industry. Areas covered at this schools course are advanced skills and knowledge in finance, staff supervision and quality management. Candidates can choose to complete the schools Diploma of Hospitality Management to incorporate a major in Commercial Cooking or Patisserie. The major refers to the Certificate Courses 'embedded' within the Diploma program.

All courses are Nationally Recognised by the Department of Education, Science and Training (DEEWR). All Academia schools students undergo practical training in our state of the art demonstration kitchen ( on-campus ) which is balanced by practical participation and experience in our commercial kitchen ( off- campus ) situated at luxurious 5-star Langham Hotel, Southbank Melbourne.

 

The luxurious Langham Hotel, Melbourne’s premier 5-star hotel, has gathered a cross section of the world’s culinary greats to talk, teach, share and enthuse an audience of home cooks, wine lovers and professionals. Academia International is proud to have its students selected to support and experience world renowned chefs including:

 

  • Andoni Luis Aduriz: Chef owner of 2 Michelin Star Restaurant Muraritz near San Sabestian, was named 10th best restaurant in the world earlier this year by the UK industry publication Restaurant Magazine  
  • Sam and Sam Clark: Owners and chefs of London’s much-loved Moro restaurant
  • Vincenzzo Cammerucci: Chef from one Michelin Star Italian restaurant Lido Lido on the Adriatic Coast
  • Guy Grossi: Chef/owner of Grossi Florentino
  • Thierry Marx: Recently named Chef of the Year by the Gault Millau guide. One of France’s most noted chefs, Thierry Marx achieved a two Michelin stars from Gault Millau at Chataeau Cordeillan-Bages.
